OPERATIONS CONSULTING

We are working with the Altland House in Abbotstown (PA) to drive sales and marketing efforts, reduce food, labor and other expenses and improve food and service offerings. We continue to meet regularly with ownership and management and be available by phone, fax and email in an advisory role. The outcome of our involvement with the full-service country inn has been an increase in sales of $211,000 and net income of $163,000 in the last two years, as shown in the chart above. We have performed similar roles with hotels and restaurants in Rock Hill (SC), Canterbury (CT), Central Falls (RI) and Great Falls (VA).

  • Profit Enhancement - Implementation of systems, controls and improved financial reporting for a free-standing seafood restaurant resulting in five percent improvement in prime (food, beverage and labor) costs.

  • Turnaround/Crisis Management - Directed profitable turnaround of highly-leveraged restaurant and banquet facility.

  • Training Programs - Developed organizational structure, job descriptions and training programs for City Club resulting in improved morale, lower turnover rate and enhanced member satisfaction and club utilization.

  • Marketing and Promotions Planning - Developed and assisted implementation of new marketing and promotions campaign for a free-standing Italian restaurant resulting in significant revenue improvement.

  • Business Planning - Review of business plan and debt/equity structuring for successful restaurant reconcept and expansion.

  • Productivity Improvement - Efficiency study of ferryboat operation and development of food court concepts to enhance capture rate and passenger per capita revenue.

  • Menu Development, Design and Layout - Designed and developed new menu for free-standing restaurant within an amusement park resulting in doubling of food and beverage revenue.

This position will be responsible for directing, coordinating, training and supervising the Sales Managers. Responsibilities include growing existing accounts and generating new business.
Job Requirements:The ideal candidate will have previous experience as a Sales Manager, preferably as Director of Sales along with excellent communication skills. Experience in the Corporate, SMERF and leisure markets required.

LITIGATION AND LENDING INSTITUTION SUPPORT

Examples of litigation and lending institution support engagements include:

  • Preparation of defendant's expert's report including estimates of hotel room night utilization from a proposed arena and convention center in Central Pennsylvania. Case was settled in favor of defendant.

  • Preparation of an Expert's Report including estimates of cash flow and business value related to alleged loss of restaurant profits and closing of plaintiff's restaurant due to malfunctioning ventilation system. The case was settled with significantly reduced award to plaintiff.

  • Preparation of cash flow damage estimates for plaintiff resulting from business losses caused by salmonella poisoning in five national franchise restaurants. Plaintiff was awarded damages consistent with our estimate.

  • Preparation of expert's report and litigation defense involving alleged business losses in farmer's market partnership dispute. The case was settled in favor of the defendant, our client.

  • Preparation of expert's report including potential cash flow estimates from three-unit restaurant chain on behalf of creditors committee for numerous financial institutions. The settlement repayment schedule to the creditors was increased significantly as a result of our expert's report.

  • Preparation of Expert's Report for defendant mall developer in suit brought by tenant for alleged cash flow damages resulting from mall vacancies. Following the submission of our report, the court ruled that the plaintiff suit was not justified.

  • Preparation of Expert's Report for creditor in suit brought a prospective entertainment complex developer seeking damages for breach of contract. Plaintiff's damage estimates were based on potential cash flows resulting from operation of the complex. With assistance from national concert promoter, case was settled for significantly reduced award.

  • Appraisal and update for creditor of bankrupt independent restaurant for the purpose of determining bank's disposition strategy. Court ruled in favor of expert's appraisal value and bank took possession of the asset.
